I must admit, this isn’t an ORIGINAL recipe of mine,  but when my fiancee made dinner tonight and it just happened to be super healthy and super simple, I knew I must spread the word! This recipe is fun because everyone gets their own little packet of food and you can eat it right from the foil! Bonus- fewer dishes!

Ingredients

Instructions
  1. Preheat oven to 350 degrees.
  2. Slice up the onion, jalapeno, carrots, potato and red pepper.
  3. Divide the foil into 4 pieces. Spray each piece with cooking spray. (This will make your "packet".)
  4. Put 1/4 of the meat on top of each piece of foil.
  5. Add 1/4 of the veggies and potato to each packet.
  6. Sprinkle each packet with salt and pepper.
  7. Close up the foil all the way around so there aren't any holes and it makes a packet. (This is how it will cook everything and keep it moist.)
  8. Place the packets directly in the oven and cook at 350 degrees for one hour.
  9. That's it!
Recipe Notes
  • We topped it with tapatio (hot sauce) and ketchup but any fun condiments will work!
  • You can also make extras and just re-heat in the oven the next day.
