I must admit, this isn’t an ORIGINAL recipe of mine, but when my fiancee made dinner tonight and it just happened to be super healthy and super simple, I knew I must spread the word! This recipe is fun because everyone gets their own little packet of food and you can eat it right from the foil! Bonus- fewer dishes!
Ingredients
- 1 lb 97% extra lean ground beef
- 1 potato
- 1 white onion
- 1 jalapeno pepper
- 20 baby carrots
- 1 red pepper
- salt to taste
- pepper to taste
- nonstick cooking spray
- 4 feet foil

Instructions
- Preheat oven to 350 degrees.
- Slice up the onion, jalapeno, carrots, potato and red pepper.
- Divide the foil into 4 pieces. Spray each piece with cooking spray. (This will make your "packet".)
- Put 1/4 of the meat on top of each piece of foil.
- Add 1/4 of the veggies and potato to each packet.
- Sprinkle each packet with salt and pepper.
- Close up the foil all the way around so there aren't any holes and it makes a packet. (This is how it will cook everything and keep it moist.)
- Place the packets directly in the oven and cook at 350 degrees for one hour.
- That's it!
Recipe Notes
- We topped it with tapatio (hot sauce) and ketchup but any fun condiments will work!
- You can also make extras and just re-heat in the oven the next day.
