Use this when you want something that tastes really indulgent but you’re trying to “save” on calories and fat. It is truly something that tastes creamy and “unhealthy” but it is amazing! Plus, the heat from the jalapeƱos and the spice of paprika add extra flavor you wouldn’t have in plain ‘ol egg whites.
Ingredients
- 1/2 cup southwest style egg beaters regular egg beaters work too
- 3 sliced mushrooms
- 3 tbsp chopped onions
- 2 tbsp chopped black olives
- 2 tbsp chopped orange bell pepper
- 1/2 chopped jalapeno remove seeds to decrease heat
- 1/4 cup shredded fat free cheese
- dash paprika
- dash salt
- dash ground pepper

Instructions
- Using nonstick cooking spray, cook all of the veggies in a pan on medium heat. Cook until they're mostly soft.
- Add a little more cooking spray. Add the egg beaters.
- As the egg beaters start to cook on the bottom, use a spatula to lift them up and let the uncooked portions reach the pan and also cook. Continue doing that until almost all of the egg has been cooked.
- Sprinkle the cheese, paprika, salt and pepper to the top. Enjoy!
Recipe Notes
If you don't have egg beaters, you can use egg whites or eggs!
The whole frittata only has about 135 calories! 21 grams of protein!
I also sometimes add southwest spicy mustard to the top for even more kick.
